When I came across an ad for a local Massage Therapy school, I knew instantly that this was my calling. What I didn’t know at the time was that it was only the beginning of my journey to empower those who desire a whole, inclusive, and holistic approach to health and wellness. Yoga had always been part of my health and wellness routine, and I felt a draw to teach others this ancient practice which nurtures mind, body and spirit. I then enrolled in the Himalayan Institute of Buffalo and became a Certified Yoga Instructor. During this training I was introduced to Ayurveda, the sister science of yoga and it felt natural for me to continue my education and knowledge in Ayurveda, it was then I enrolled in the Ayurveda Health Counselor program.       <image:caption>1 pound or more organic unsalted butter 1. Melt the butter in a heavy bottomed saucepan over medium heat. Reduce the heat to a simmer and cook, stirring occasionally. After about 5 minutes, the butter will begin to form a white froth on its surface and will also create popping sounds as moisture evaporates from the butter. At this stage keep stirring at regular intervals. 2. After about 10 minutes, the froth will begin to sink to the bottom of the pan where it will collect and form a golden-brown crust. When the butter becomes clear, turn off the heat and let sit for 10-15 minutes.  3. Carefully pour the contents through an unbleached cheesecloth or a fine sieve into a glass jar, leaving the residue at the bottom of the cooking pan.  4. DONE! Ghee is bested stored at room temperature and is said to get better with age, such as a fine wine. Always use a clean spoon when taking ghee from the jar, in order toavoid spoilage resulting from contamination with other foods. Ghee is excellent for sauteing or roasting vegetables and for frying spices. It has a smooth, slightly nutty taste and an opaque, deep yellow color when cool. Ayurveda considers ghee one of the most stable cooking oils, due to its ability to withstand high temperatures without burning or becoming rancid.</image:caption>

      <image:caption>2 apples peeled cored and sliced 5 dried apricots soaked in hot water for 20 minutes 4 dates-medjool-pitted and cut in half  2 cups water 1 tbs of maple syrup 1 tbs grated fresh ginger ¼ tsp of cardamom ¼ tsp of cinnamon Put all ingredients into a medium saucepan. Bring to boil over high heat, reduce to medium/low cover a simmer for 5 minutes. With a ladle transfer about 1/3 of contents including the liquid to a blender and puree, return to pan serve warm.</image:caption>

Pinch to 1/4 teas. each of the following fresh herbs: cinnamon cardamom nutmeg  saffron  1 teas. of ghee (clarified butter)  Please put all ingredients in a saucepan and soft boil for about 3 minutes. Remove from the stove and let sit for a minute or so and then add honey to taste. (Please add either more or less than 1 teaspoon; equal parts honey and ghee are an ayurvedic “no-no.”) Take to a cozy bed and sip until finished.</image:caption>
